Method
- 1
Soak the oats
Stir the oats, plant milk and raisins together in a bowl or jar. Cover and refrigerate overnight, or for at least four hours.
- 2
Grate the apple
In the morning, grate the apple coarsely and toss it with the lemon juice so it does not brown.
- 3
Bring it together
Fold the apple and the yogurt through the soaked oats. Loosen with a little more plant milk if it has set firmer than you like.
- 4
Serve
Spoon into bowls, top with the almonds and a pinch of cinnamon, and add maple syrup if you want it sweeter.
Notes
The apple goes in fresh in the morning rather than overnight, which is what keeps it crisp and stops the whole bowl turning brown. It keeps two days in the fridge.
