Buffalo Cauliflower Wings

Game-day wings, baked not fried. Cauliflower florets dipped in a simple seasoned batter, baked until crisp, tossed in buffalo sauce and returned to the oven until sticky. Served with celery sticks and vegan ranch.

    Heat the oven and make the batter

    Heat the oven to 425°F (220°C) and line a tray. Whisk the flour, plant milk, garlic powder and paprika into a batter.

    Batter and bake

    Dip each floret in the batter, letting the excess drip off, and arrange on the tray. Bake for 20 minutes until set and crisp.

    Toss in buffalo sauce

    Whisk the buffalo sauce with the oil or melted vegan butter. Toss the baked florets in the sauce to coat.

    Bake again until sticky

    Return to the oven for 10–15 minutes more, until sticky and crisp. Serve with celery and vegan ranch.

Notes

Baking instead of frying keeps these light. Use chickpea flour for extra protein and to make them gluten-free. Toss in sauce only after the first bake so they stay crisp.
