Chrysanthemum and Goji Cooler
Dried chrysanthemum flowers and goji berries steeped into a pale gold, honeyed-floral tea, served cold with the softened berries still in the glass.

Steep the flowers and berries
⏱ 10 minBring the water to the boil in a pot, drop in the chrysanthemum flowers and the goji berries, and take it off the heat immediately. Cover and steep for 10 minutes — the flowers open out and the berries plump up.

Sweeten lightly
Stir in the agave if you want it sweet at all. Chrysanthemum has its own soft sweetness and most people take it plain.

Strain and chill
Strain out the flowers but keep the goji berries — spoon a few into each glass. Chill and serve over ice.
Notes
Boiling the flowers rather than steeping them off the heat makes the tea bitter and dulls the color. The rehydrated goji berries at the bottom of the glass are meant to be eaten. Sold in Chinese supermarkets as 菊花茶; the small white flowers are milder than the large yellow ones.
