Elderflower and Lemon Cooler

Elderflower cordial cut with lemon, cucumber and mint over a lot of ice. Barely a recipe, and the most refreshing thing in the book.

    Build the jug

    Pour the elderflower cordial and the lemon juice into a large jug and stir. Add the cucumber ribbons and the mint, pressing the mint against the side of the jug once or twice to bruise it.

    Chill briefly

    15 min

    Leave the jug in the fridge for 15 minutes so the cucumber and mint have time to release into the cordial. Any longer and the cucumber goes soft and slightly bitter.

    Top with soda and serve

    Fill the jug with ice, top with cold soda water and stir once from the bottom. Serve with a cucumber ribbon in each glass.

Notes

Cordials vary hugely in strength — start with less and taste after the soda goes in, because dilution changes everything. A peeler makes better cucumber ribbons than a knife. If you make your own elderflower cordial in June, this is what to do with it.
