Ful Medames
The Egyptian breakfast: fava beans warmed through and crushed roughly in their own liquid, sharpened with lemon and garlic, then flooded with olive oil and scattered with tomato and parsley. Eaten with bread, out of the same bowl.

Warm the beans
⏱ 5 minTip the beans into a saucepan with their liquid and warm over a medium heat until steaming.

Crush and season
Crush about half the beans against the side of the pan with a fork, so the bowl has texture rather than being a puree. Stir in the garlic, cumin and lemon juice, and season with salt.

Finish the bowl
Spoon into bowls and pour a generous slick of olive oil over each one. Scatter with the tomato and parsley and add chili flakes to taste.

Serve
Serve hot with warm flatbread for scooping.
Notes
Canned fava beans, sold as ful medames, come ready-cooked and are stocked by most supermarkets and every Middle Eastern grocer. The oil is not a garnish, so be generous with it.
