Hot Maple Drizzle
Maple syrup infused with chili and a little vinegar until it is sweet, hot and sharp all at once. The vegan answer to hot honey, and it goes on everything.

Method
- 1
Warm the syrup
⏱ 3 minPut the maple syrup in a small saucepan over the lowest heat you can manage. It must not boil; boiled maple turns bitter and thickens into candy.
- 2
Steep the chili
⏱ 5 minAdd the chili flakes and the sliced chili and let it sit at barely a shiver for five minutes, until the syrup smells hot and the flakes have colored it red.
- 3
Sharpen it
Take it off the heat, stir in the vinegar and a pinch of salt, and let it cool. The vinegar is what stops it being merely sweet.
Notes
Keeps for a month in a jar at room temperature; the heat gets stronger for the first few days. Good on pizza, on fried tofu, and on anything involving cornbread.
