Hot Maple Drizzle

Maple syrup infused with chili and a little vinegar until it is sweet, hot and sharp all at once. The vegan answer to hot honey, and it goes on everything.

    Warm the syrup

    Put the maple syrup in a small saucepan over the lowest heat you can manage. It must not boil; boiled maple turns bitter and thickens into candy.

    Steep the chili

    5 min

    Add the chili flakes and the sliced chili and let it sit at barely a shiver for five minutes, until the syrup smells hot and the flakes have colored it red.

    Sharpen it

    Take it off the heat, stir in the vinegar and a pinch of salt, and let it cool. The vinegar is what stops it being merely sweet.

Notes

Keeps for a month in a jar at room temperature; the heat gets stronger for the first few days. Good on pizza, on fried tofu, and on anything involving cornbread.
