Limonana (Mint Lemonade)
Lemon juice and a whole bunch of mint blitzed with ice into a pale-green frozen slush. The drink of every Levantine summer street.

Make the lemon base
Stir the lemon juice, the sugar and a pinch of salt together in a bowl with the cold water until the sugar has completely dissolved.

Blitz with mint and ice
⏱ 1 minTip the lemon base into a blender with the mint leaves and a big handful of ice. Blitz hard until it is a pale-green slush with no visible mint fragments.

Serve immediately
Pour into glasses and drink straight away, while it is still frozen and foaming. It separates within minutes, which is why nobody makes this in advance.
Notes
Use the leaves only — mint stalks are bitter and blend into a gray, grassy note that dominates. The salt is not optional; it stops the sugar reading as flat. If it separates before you get to the table, blitz it again for five seconds.
