Mango Lassi

Ripe mango blended with plant yogurt and a pinch of cardamom into a thick, cold, barely-sweet drink. The traditional partner to anything fiery.

    Blend

    Put the mango, plant yogurt, plant milk, maple syrup, cinnamon, lime juice and a pinch of salt into a blender and blend until completely smooth and thick.

    Taste and serve

    Taste and adjust — more syrup if the mango was sharp, more plant milk if you want it pourable rather than spoonable. Serve very cold over ice.

Notes

The mango must be properly ripe; underripe fruit makes a thin, sour lassi no amount of syrup will save. Frozen mango works well and gives a thicker drink — skip the ice if you use it. The pinch of salt is what makes the fruit taste more like itself.
