Peanut Butter and Banana Overnight Oats
The five-minute-tonight, grab-and-go-tomorrow breakfast. Oats soften in the fridge overnight into a creamy, spoonable pot that tastes like a peanut butter and banana sandwich.

Mash and mix
In a bowl or large jar, mash one banana to a purée. Stir in the peanut butter, plant milk, maple syrup if using and a pinch of salt until smooth.

Add oats and chia
⏱ 1 minStir in the oats and chia seeds until everything is evenly coated and there are no dry pockets. The chia is what thickens it, so make sure it's mixed through.

Chill overnight
Divide between jars, one per serving, cover and refrigerate overnight (or at least 4 hours). It will thicken to a creamy, spoonable pudding.

Serve
In the morning, loosen with a splash more plant milk if you like it looser, then top with the sliced banana and eat cold.
Notes
Contains peanuts. No overnight? Four hours in the fridge is enough. Keeps for up to three days, so make a double batch for the week. Add a spoon of cocoa for a chocolate-peanut version.
