Peanut Sauce
Salty, sour, sweet and hot in roughly equal measure, loosened to a pourable cream. It takes five minutes and improves almost anything it lands on.

Loosen the peanut butter
⏱ 2 minWhisk the peanut butter with about half the warm water. It will seize and look ruined first; keep going and it comes back smooth.

Season it
Whisk in the soy sauce, lime juice, maple syrup, ginger, garlic and chili flakes until glossy.

Adjust
Add the rest of the water a splash at a time until it pours off the spoon in a ribbon. Taste and push whichever of salt, sour or sweet is hiding.
Notes
Natural peanut butter needs more water and more maple than the sweetened kind. Taste as you go rather than trusting the quantities.
