Soba with Edamame and Greens

Soba, edamame and broccoli in a light soy-sesame dressing, served warm or cold. About as fast as dinner gets.

    Boil everything together

    Bring a large pot of water to the boil and add the soba. Two minutes before the packet time is up, add the broccoli florets and the frozen edamame straight from the bag. One pot, one drain.

    Drain and rinse

    Drain and rinse briefly under cold water to stop the noodles cooking, then shake dry.

    Dress

    Tip into a bowl and toss with the soy sauce, sesame oil and lime juice while still slightly warm, so it drinks the dressing.

    Serve

    Scatter with the scallions and sesame seeds. Good warm now or cold from the fridge tomorrow.

Notes

Adding the broccoli and edamame to the noodle water saves a pan and times itself. Rinse only briefly — you want the noodles cool enough to stop cooking but still warm enough to absorb the dressing.
