Vegan Smash Burger

A patty pressed thin against a screaming hot pan until the whole underside turns to lace and crust. Cheese, pickles, and a bun that has seen butter.

    Toast the buns

    Melt the vegan butter in a heavy skillet and press the cut faces of the buns into it until they are golden. Set them aside; you want them ready before the patties are.

    Get the pan hot

    Wipe the pan, add the oil and put it over the highest heat you have. Wait until it is properly hot. A lukewarm pan steams the patty instead of crusting it, and there is no recovering from that.

    Smash

    Lay a patty in and press it flat and thin with a stiff spatula, hard, for a full ten seconds. Season the top. Then leave it alone for two minutes while the crust forms.

    Flip and melt

    1 min

    Scrape under the patty so the crust comes away with it, flip, and lay the cheese on straight away. One more minute and it is done.

    Build it

    Mustard and ketchup on the base, then the patty, then the onion and pickles on top so they do not slide. Lid on, and eat it immediately.

Notes

Two thin patties beat one thick one: twice the crust. If your pan will only take one at a time, cook them one after the other rather than crowding it.
