Watermelon Agua Fresca

Ripe watermelon blended with water and lime into something lighter and more drinkable than juice. Five minutes of work and it tastes like the middle of summer.

    Blend the melon

    Blend the watermelon with the cold water until completely liquid. Work in two batches rather than overfilling the jug — melon foams up more than you expect.

    Strain into a jug

    Pour through a sieve into a jug to catch the froth and any stray seeds. Don't press it; let it run through on its own or the drink turns cloudy and thick.

    Season and serve

    Stir in the lime juice, a pinch of salt, and the agave only if the melon needed help. Serve over plenty of ice with a few mint leaves bruised into each glass.

Notes

A properly ripe melon needs no sweetener at all — taste before you reach for the agave. The pinch of salt is what makes it taste more like watermelon rather than merely sweet. Best drunk the day it is made; it dulls by the second day.
